Ingredients
  

  • 1 cup rolled oats (plus ¼ cup reserved)
  • 1 tsp ground cinnamon
  • ½ tsp baking soda
  • ½ tsp baking powder
  • 1 large apple, peeled and chopped
  • 3 tbsp honey (or maple syrup)
  • 1 tsp vanilla extract
  • 3 tbsp plain yogurt
  • 2 large eggs (or flax eggs for vegan option)
  • 1 tbsp unsalted butter or coconut oil
  • Optional: chopped nuts, raisins, or chocolate chips

Instructions
 

  • Preheat and Prepare
    Preheat your oven to 350°F (180°C). Line a small baking pan with parchment paper, using butter or coconut oil to secure it if necessary.
  • Mix Wet and Dry Ingredients
    In a blender or large bowl, combine all ingredients except ¼ cup of oats. Blend or mix until smooth. Fold in the reserved oats gently for added texture.
  • Bake the Cake
    Pour the batter into the prepared pan and smooth the top. Bake for 20–30 minutes, checking with a toothpick; if it comes out clean, the cake is ready.
  • Cool and Serve
    Allow the cake to cool in the pan for 10–15 minutes, then transfer to a wire rack. Store in an airtight container in the refrigerator. Enjoy warm or chilled!
