Two Ingredient Cottage Cheese Tots are crispy on the outside, soft and cheesy on the inside, and made with just cottage cheese and panko breadcrumbs. These easy baked tots are perfect for snacks, appetizers, or kid-friendly meals.

Ingredients
  

  • 2 cups cottage cheese
  • 1.5 cups panko breadcrumbs or gluten-free breadcrumbs
  • 1 tsp garlic powder or onion powder (optional)
  • 2 tbsp chopped fresh parsley (optional)
  • 0.25 cup shredded cheddar cheese (optional)

Instructions
 

  • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease with cooking spray.
  • In a large bowl, combine the cottage cheese and panko breadcrumbs. Mix until firm enough to shape, adding extra breadcrumbs if needed.
  • Use a tablespoon or small cookie scoop to portion the mixture. Shape into tot shapes and place on the prepared baking sheet.
  • Bake for 25–30 minutes, flipping halfway through, until golden brown and crispy.
  • Allow the tots to cool for a few minutes before serving as a snack, side dish, or appetizer.

Notes

If the mixture feels too wet, add extra breadcrumbs until easy to shape. Flip halfway through baking for even crispness. Avoid reheating in the microwave to keep the tots crunchy.
