Ingredients
  

  • 1 lb breakfast sausage
  • 2 tbsp unsalted butter
  • 0.25 cup all-purpose flour
  • 2 cups whole milk
  • salt, to taste
  • freshly ground black pepper, to taste
  • 4 cups frozen tater tots
  • 4 large eggs
  • 1 cup shredded sharp cheddar cheese
  • fresh chives, finely chopped (optional garnish)

Instructions
 

  • Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • Spread the frozen tater tots in a single layer and bake for 20–25 minutes, flipping halfway, until golden and crispy.
  • Heat a large skillet over medium heat. Cook the sausage, breaking it apart, until browned and fully cooked. Transfer to a plate.
  • In the same skillet, melt the butter. Whisk in the flour and cook for 1–2 minutes until lightly golden.
  • Slowly whisk in the milk, stirring constantly, until smooth and thickened. Season with salt and black pepper.
  • Return the cooked sausage to the skillet and simmer the gravy on low heat for 2–3 minutes.
  • In a separate skillet, fry the eggs to your preferred doneness.
  • Divide crispy tater tots into bowls. Spoon sausage gravy over the top, add a fried egg, and sprinkle with cheddar cheese.
  • Garnish with chopped chives if desired and serve immediately.

Notes

Bake the tater tots until deeply golden so they stay crisp under the gravy. Whisk constantly when adding milk to avoid lumps, and cook eggs last for the freshest texture.
