Transfer dough to a floured surface and knead for about 10 minutes until smooth and elastic.
Place dough in a lightly oiled bowl, cover, and let rise for 1 hour or until doubled.
Punch down the dough and roll it into a rectangle about ¼-inch thick.
Evenly spread garlic, fresh herbs, and shredded cheese over the surface.
Roll the dough tightly from the long edge, sealing the seam well.
Place into a greased loaf pan, cover, and let rise for 30 minutes.
Bake at 375°F (190°C) for 25–30 minutes until golden brown.
Cool slightly, slice, and serve warm.
