For the Patties
- 2 medium sweet potatoes, peeled and cubed
- 1 cup cooked red lentils
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp paprika
- Salt and pepper, to taste
- ½ cup breadcrumbs
- 1 tbsp olive oil (for frying)
For the Creamy Avocado Cilantro Sauce
- 1 ripe avocado
- ¼ cup fresh cilantro, chopped
- 1 tbsp lime juice
- Salt, to taste
- Water, as needed for consistency
For the Mango Chutney Glaze
- ½ cup mango chutney
- 1 tbsp lime juice
Cook the Sweet PotatoesBring a large pot of water to a boil. Add the cubed sweet potatoes and cook 15–20 minutes or until fully tender. Drain and mash until smooth. Mix the Patty IngredientsIn a mixing bowl, combine the mashed sweet potatoes, cooked lentils, onion, garlic, cumin, paprika, breadcrumbs, salt, and pepper. Stir until the mixture comes together and can be shaped. Form the PattiesShape the mixture into small patties, about 2–3 inches wide. If the mixture feels too soft, add an extra spoonful of breadcrumbs. Heat the OilWarm olive oil in a skillet over medium heat. Blend the Avocado SauceIn a blender or food processor, add the avocado, cilantro, lime juice, and salt. Blend until creamy, adding water gradually for your preferred texture.
