Equipment

  • blender or food processor
  • Spatula
  • mixing bowl (optional)
  • serving dishes or piping bags

Ingredients

  • 8 oz cream cheese or full-fat coconut cream
  • 4 oz plain yogurt or additional cream cheese or coconut cream
  • 1 cup powdered sugar or powdered sugar alternative
  • 5 medium fresh strawberries, hulled
  • 0.25 tsp vanilla bean paste (optional)

Instructions

  • If using cream cheese, allow it to soften at room temperature for easier blending.
  • If using coconut cream, ensure it is thick and creamy, not hardened or flaky.
  • Remove stems from strawberries and blend until completely smooth.
  • Add remaining ingredients to the blender or food processor.
  • Blend until light, fluffy, and silky smooth.
  • Spoon or pipe the mousse into serving dishes.
  • Refrigerate until chilled and set, at least 1 hour for best texture.

Notes

Texture improves after chilling. Adjust sweetness to taste before serving. Works well as both a dessert and a dessert filling. Best enjoyed within four days for peak freshness.
