Ingredients
  

  • 1 cup rolled oats
  • 1 scoop vanilla protein powder
  • ½ cup almond butter
  • ¼ cup honey or maple syrup
  • 1 cup fresh strawberries, finely chopped
  • 4 oz reduced-fat cream cheese, softened
  • ¼ cup unsweetened coconut flakes (optional)

Instructions
 

  • Line a baking sheet with parchment paper and set aside.
  • In a large bowl, stir together rolled oats and protein powder until evenly combined.
  • Mix in almond butter and honey until a thick, sticky dough forms.
  • Gently fold in chopped strawberries and softened cream cheese until evenly distributed.
  • Roll the mixture into 1-inch balls using slightly damp hands.
  • Place balls on the prepared baking sheet and refrigerate for at least 30 minutes before serving.

Notes

Finely chop strawberries to prevent excess moisture. Chill the mixture briefly if too soft to roll. Best enjoyed chilled for optimal texture.
