Ingredients
  

  • 2 cups gluten-free all-purpose flour (with xanthan gum)
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 tablespoon instant yeast
  • 1 cup warm water
  • 1/4 cup olive oil
  • 2 large eggs

Instructions
 

  • In a large bowl, whisk together the gluten-free flour, sugar, salt, and instant yeast until evenly combined.
  • In a separate bowl, whisk the warm water, olive oil, and eggs until smooth.
  • Pour the wet mixture into the dry ingredients. Stir until a thick, sticky dough forms.
  • Cover the bowl with a clean towel and let the dough rest in a warm place for 30 minutes, or until slightly puffed.
  • Preheat the oven to 375°F (190°C) and lightly grease a baking dish.
  • Scoop equal portions of dough and gently shape into rolls. Place them slightly apart in the baking dish.
  • Bake for 20–25 minutes, or until the tops are lightly golden.
  • Let the rolls cool for a few minutes before serving warm.

Notes

Use a gluten-free flour blend that includes xanthan gum for best results. Sticky dough is normal—avoid adding extra flour. Make sure your yeast is fresh for proper rise. Serve warm for the softest texture and brush tops with olive oil for extra moisture if desired.
