Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, chilled and diced
  • 1/4 cup sugar
  • 1 tsp salt
  • 1/4 tsp ground cinnamon
  • 4–5 tbsp ice water
  • 1 cup light corn syrup
  • 3/4 cup whiskey or bourbon
  • 3/4 cup honey
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 tsp sea salt, for topping
  • whipped cream, for serving

Instructions
 

  • In a bowl, mix the flour, sugar, salt, and cinnamon. Add the chilled butter and cut it into the flour until pea-sized crumbs form. Gradually add ice water until the dough comes together.
  • Shape the dough into a disk, wrap tightly, and refrigerate for 1 hour.
  • Preheat the oven to 350°F (175°C). Roll the dough into a 9-inch pie dish, trim the edges, prick the bottom with a fork, line with parchment, add pie weights, and bake for 15 minutes. Remove weights and bake 5 minutes more.
  • In a bowl, whisk together the corn syrup, whiskey, honey, eggs, and vanilla until smooth.
  • Pour the filling into the pre-baked crust and bake for 35–40 minutes, until the edges are set and the center is slightly jiggly.
  • Remove the pie from the oven and cool completely on a wire rack before serving.
  • Sprinkle sea salt over the top, slice, and serve with whipped cream if desired.

Notes

For best results, allow the pie to cool completely so the filling can fully set. Use a good-quality bourbon for deeper caramel and vanilla notes. This pie tastes even better the next day as the flavors develop.
