Ingredients
  

  • 4 large sweet potatoes, peeled and cubed (1-inch pieces work best)
  • 2 tbsp olive oil
  • ¼ cup pure maple syrup
  • 1 tsp ground cinnamon
  • Salt and black pepper to taste
  • (Optional): A sprinkle of chopped pecans or a pinch of cayenne for heat

Instructions
 

  • Preheat the oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
  • Toss the potatoes in a large bowl with olive oil, maple syrup, cinnamon, salt, and pepper until evenly coated. Don’t rush this part — the coating helps them caramelize beautifully.
  • Spread out the sweet potatoes in a single layer on the baking sheet. Crowding them makes them steam instead of roast.
  • Roast for 30–35 minutes, flipping once halfway through, until tender inside and slightly crisp at the edges.
  • (Optional): For extra shine, drizzle a touch more warm maple syrup right before serving.
