Ingredients
  

  • 4 cups fresh spinach, washed and dried
  • 2 cups fresh mushrooms, sliced
  • 2 tbsp olive oil
  • 2 cloves garlic, finely minced
  • salt, to taste
  • black pepper, to taste
  • fresh lemon juice (optional)
  • grated Parmesan cheese (optional)

Instructions
 

  • Heat the olive oil in a large skillet over medium heat until warm but not smoking.
  • Add the minced garlic and sauté for about 30 seconds, stirring constantly until fragrant.
  • Add the sliced mushrooms in a single layer and cook for 5–7 minutes, stirring occasionally, until golden.
  • Season the mushrooms with salt and black pepper.
  • Add the fresh spinach and gently toss with the mushrooms.
  • Cook for 2–3 minutes until the spinach wilts and everything is combined.
  • Remove from heat, add lemon juice if desired, and garnish with Parmesan before serving.

Notes

Use a wide skillet to avoid steaming the mushrooms. Add spinach at the end to preserve color and texture. Finish with lemon juice for brightness.
