Ingredients

fresh spinach, washed and dried

cups
fresh mushrooms, sliced
2
tbsp
olive oil
2
cloves
garlic, finely minced
salt, to taste
black pepper, to taste
fresh lemon juice (optional)
grated Parmesan cheese (optional)
Instructions
Heat the olive oil in a large skillet over medium heat until warm but not smoking.
Add the minced garlic and sauté for about 30 seconds, stirring constantly until fragrant.
Add the sliced mushrooms in a single layer and cook for 5–7 minutes, stirring occasionally, until golden.
Season the mushrooms with salt and black pepper.
Add the fresh spinach and gently toss with the mushrooms.
Cook for 2–3 minutes until the spinach wilts and everything is combined.
Remove from heat, add lemon juice if desired, and garnish with Parmesan before serving.
Notes
Use a wide skillet to avoid steaming the mushrooms. Add spinach at the end to preserve color and texture. Finish with lemon juice for brightness.
