Ingredients
  

  • 3 very ripe bananas
  • 1/2 cup smooth peanut butter or almond butter
  • 1/2 cup vanilla or chocolate protein powder
  • 1/4 cup unsweetened cocoa powder
  • mini chocolate chips (optional)

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a medium bowl, mash the bananas until mostly smooth. Small lumps are fine.
  • Stir in the nut butter until fully combined and creamy.
  • Add the protein powder and cocoa powder, mixing until a thick, smooth batter forms.
  • Place 8 silicone baking cups into a muffin pan and divide the batter evenly between them.
  • Sprinkle mini chocolate chips on top if using.
  • Bake for 20 minutes, or until the tops look set.
  • Allow the brownie bites to cool completely before removing them. They will firm up as they cool.

Notes

Let the brownie bites cool completely before removing them from the liners, as they firm up while cooling. Protein powder brands vary, so if the batter feels too thick, adjust with a tablespoon of nut butter. Slightly underbaking keeps the centers extra fudgy.
