Ingredients
  

  • 2 ripe peaches, peeled and diced
  • 1 cup fresh cherries, pitted and halved
  • 1/2 small red onion, finely diced
  • 1 jalapeño pepper, seeded and finely chopped
  • 2 garlic cloves, minced
  • 1 handful fresh cilantro, finely chopped
  • 1 1/2 limes, juiced
  • 1 lime, zested
  • sea salt, to taste

Instructions
 

  • Peel and dice the peaches into small, even pieces. Pit and halve the cherries. Finely dice the red onion and jalapeño. Mince the garlic and chop the cilantro. Juice the limes and zest one lime.
  • Add peaches and cherries to a large mixing bowl. Stir in red onion, jalapeño, garlic, and cilantro. Pour in lime juice and sprinkle with lime zest. Season with salt and gently fold until combined.
  • Refrigerate for at least 15 minutes to allow flavors to blend. Stir gently before serving and adjust seasoning if needed.

Notes

For best flavor, serve slightly chilled—not ice cold. Choose firm, ripe fruit to maintain texture. Taste the jalapeño before adding to control heat levels. Always adjust salt and lime juice before serving. Not recommended for freezing as texture may become watery.
