  • 1 small head of cabbage (cut into thick ½-inch slices)
  • 1 ½ lbs ground beef (or ground turkey for a lighter version)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp smoked paprika
  • 1 tsp Worcestershire sauce
  • ½ cup shredded cheese (cheddar, mozzarella, or your favorite)
  • 2 tbsp olive oil
  • 1 egg (optional — helps bind turkey or lean meats)

Optional Add-ins:

  • A pinch of chili flakes for heat
  • 1 tsp dried herbs (thyme, oregano, or parsley) for extra depth

Instructions
 

  • Preheat the Oven
    Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or foil for easy cleanup.
  • Slice and Prep the Cabbage
    Cut your cabbage into thick, round slices (½ inch). Brush both sides with olive oil and place them on the baking sheet. These will serve as your “buns.”
  • Mix the Burger Filling
    In a large bowl, combine ground beef (or turkey), onion, garlic, salt, pepper, smoked paprika, Worcestershire sauce, and egg if using. Mix gently but thoroughly — you want a cohesive, juicy mixture, not a dense one.
  • Assemble the Burgers
    Scoop a handful of the meat mixture and press it onto each cabbage round, shaping it like a burger patty. Don’t stress perfection — a rustic look works beautifully here.
  • Bake
    Bake for 25 minutes, or until the meat is cooked through and the cabbage edges start to caramelize.
  • Add Cheese and Broil
    Remove from the oven, sprinkle cheese generously on top, then broil for 3–5 minutes until melted and golden. Watch closely — cheese turns from golden to burnt fast!
