Ingredients
  

  • 1 unbaked 9-inch pie crust
  • 4 large eggs
  • ¾ cup granulated sugar
  • ¼ tsp salt
  • 1 tsp vanilla extract
  • 1 cup heavy cream
  • cup milk
  • ¼ tsp ground nutmeg

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • In a small bowl, separate one egg white from the yolk; set both aside.
  • Lightly brush the pie crust with the beaten egg white. Bake for 7–8 minutes, then let it cool for about 10 minutes.
  • In a large mixing bowl, whisk together:
    3 whole eggs
    the reserved egg yolk
    remaining egg white
    sugar, salt, vanilla, cream, and milk
  • Pour the custard mixture into the partially baked crust.
  • Sprinkle the top with nutmeg.
  • Bake for 35–45 minutes, or until a knife inserted halfway between the center and the edge comes out clean.
  • Let the pie cool on a wire rack.
  • Chill before serving for the best texture.
