Equipment

  • baking sheet
  • parchment paper
  • microwave-safe bowl
  • spoon or cookie scoop

Ingredients

  • 2 cups chocolate chips (milk or semi-sweet)
  • 1 cup crunchy peanut butter
  • 2 cups crispy chow mein noodles
  • 0.5 cup chopped nuts (optional)
  • 1 tsp vanilla extract
  • pinch of salt

Instructions

  • Line a baking sheet with parchment paper to prevent sticking.
  • In a microwave-safe bowl, combine chocolate chips and peanut butter. Heat in 30-second intervals, stirring between each, until melted and smooth.
  • Stir in vanilla extract and a pinch of salt until fully combined.
  • Gently fold in chow mein noodles and chopped nuts, if using, until evenly coated.
  • Scoop spoonfuls of the mixture onto the prepared baking sheet, shaping into small mounds.
  • Refrigerate for 30–60 minutes until firm. Serve immediately or store as directed.

Notes

Stir gently to keep the noodles crunchy. Use good-quality chocolate for the smoothest texture. Refrigerate promptly to help the haystacks set cleanly.
