Ingredients
  

  • 3 tbsp cottage cheese (full-fat or low-fat)
  • 1 egg
  • 2 tbsp shredded coconut
  • 2 tbsp all-purpose flour (or almond flour)
  • 1 tbsp sugar or natural sweetener
  • 1/2 tsp vanilla extract
  • 1/4 tsp baking powder
  • 1 pinch salt

Instructions
 

  • In a microwave-safe mug, add the cottage cheese and egg. Mix well with a fork until mostly smooth.
  • Stir in the flour, shredded coconut, sugar, baking powder, salt, and vanilla extract. Mix until fully combined and no dry pockets remain.
  • Microwave on high for 1 minute 30 seconds to 2 minutes, depending on your microwave power. The cake should rise and feel set but slightly soft in the center.
  • Let the mug cake cool for 1–2 minutes before adding toppings. Enjoy directly from the mug.
