Ingredients
  

For the Cake

  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup sour cream
  • 1 cup crushed pineapple, well drained

For the Pineapple Glaze

  • ½ cup powdered sugar
  • 2 tbsp pineapple juice

Instructions
 

  • Prepare Oven and Pan
    Preheat oven to 350°F (175°C).
    Grease and flour a loaf pan thoroughly.
  • Mix Dry Ingredients
    In a medium bowl, whisk together flour, baking powder, and salt.
  • Cream Butter and Sugar
    In a large bowl, use an electric mixer to beat butter and sugar until light and fluffy.
  • Add Eggs and Vanilla
    Beat in eggs one at a time, then stir in vanilla extract until well combined.
  • Combine Ingredients
    Alternately add dry ingredients and sour cream to the butter mixture, beginning and ending with dry ingredients. Mix until just combined.
  • Fold in Pineapple
    Gently fold in the drained crushed pineapple, ensuring even distribution without overmixing.
  • Bake the Cake
    Pour batter into the prepared loaf pan and smooth the top.
    Bake for 50–60 minutes or until a toothpick inserted in the center comes out clean.
  • Cool and Glaze
    Let the cake cool in the pan for 10 minutes, then transfer to a wire rack.
    Whisk together powdered sugar and pineapple juice to make the glaze. Drizzle over the cooled cake for a sweet, tropical finish.
