Ingredients
  

  • 1 lb Italian sausage (sweet or spicy)
  • 2 bell peppers (red and green), sliced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 14.5 oz diced tomatoes, canned
  • 8 oz tomato sauce
  • 1 tsp Italian seasoning
  • salt, to taste
  • black pepper, to taste
  • 1 cup shredded mozzarella cheese

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • In a large skillet over medium heat, brown the Italian sausage, breaking it apart as it cooks.
  • Add the bell peppers, onion, and garlic to the skillet. Cook until vegetables are softened.
  • Stir in the diced tomatoes, tomato sauce, Italian seasoning, salt, and black pepper until well combined.
  • Transfer the mixture to a baking dish and spread evenly.
  • Top evenly with shredded mozzarella cheese and bake uncovered for 25–30 minutes until bubbly and golden.
  • Remove from the oven and let rest for 5 minutes before serving.

Notes

Let the casserole rest for 5 minutes before serving so it sets nicely. This dish tastes even better the next day as the flavors deepen. Both sweet and spicy Italian sausage work well, depending on your heat preference.
