Ingredients
  

  • 2 cups pancake mix
  • 1 cup milk or milk alternative
  • 4 large eggs
  • 1 lb breakfast sausage
  • 1 tbsp baking powder
  • 1 tsp ground cinnamon
  • 0.25 cup pure maple syrup
  • non-stick cooking spray or butter for greasing

Instructions
 

  • Preheat the oven to 375°F (190°C) and generously grease a baking dish.
  • Cook the breakfast sausage in a skillet over medium heat until fully browned. Drain excess grease and set aside.
  • In a large bowl, whisk together pancake mix, baking powder, cinnamon, milk, eggs, and maple syrup until just combined.
  • Spread half of the batter into the baking dish, sprinkle the sausage evenly on top, then pour and smooth the remaining batter over the sausage.
  • Bake for 25–30 minutes, or until the top is golden and the center is set.
  • Allow to cool slightly, then slice and serve warm with maple syrup or fresh fruit.

Notes

Adjust sweetness with more or less maple syrup. Let the batter rest briefly before baking for extra fluffiness. Always grease the dish well to prevent sticking.
