Ingredients
  

For the Dough:

  • 2 cups all-purpose flour (plus extra for dusting)
  • 1 tsp salt
  • 1 tbsp sugar
  • 1 tsp active dry yeast
  • ¾ cup warm water (about 110°F / 43°C)
  • 1 tbsp olive oil

Instructions
 

  • Activate the Yeast
    In a small bowl, combine warm water, sugar, and yeast.
    Stir lightly and let sit for 5–10 minutes until frothy.
  • Prepare the Dough
    In a large mixing bowl, combine flour and salt.
    Pour the yeast mixture and olive oil into the flour.
    Mix until a sticky dough forms.
  • Knead the Dough
    Transfer the dough to a floured surface and knead for 5–7 minutes until smooth and elastic.
  • First Rise
    Place the dough in a lightly greased bowl, cover with a damp cloth, and let rise in a warm area for 1 hour or until doubled in size.
  • Shape the Pitas
    Punch down the dough and divide it into 8 equal portions.
    Roll each portion into a ball, then flatten into a disc about ¼ inch thick.
  • Second Rise
    Cover the discs with a clean towel and let rest for 30 minutes.
  • Bake the Pitas
    Preheat your oven to 475°F (245°C) and place a baking stone or inverted baking sheet inside.
    Transfer the discs carefully onto the hot surface.
    Bake for 5–7 minutes or until puffy and lightly golden.
  • Cool and Serve
    Remove from oven and allow to cool slightly before slicing or serving.
