Ingredients
  

  • 1 cup all-purpose flour
  • 1 tbsp sugar
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 cup milk
  • 1 large egg
  • 2 tbsp butter, melted
  • 2 tbsp maple syrup
  • 6 sausage patties, cooked and flattened
  • 6 large eggs, scrambled or fried
  • 6 slices American cheese

Instructions
 

  • Preheat oven to 350°F (175°C) and generously grease a muffin tin.
  • In a bowl, whisk together flour, sugar, baking powder, and salt.
  • Add milk, egg, melted butter, and maple syrup. Stir gently until just combined.
  • Cook sausage patties in a skillet until browned, drain excess grease, and flatten slightly.
  • Scramble or fry eggs and set aside.
  • Spoon batter into each muffin cup, add sausage, eggs, and half a slice of cheese, then top with more batter.
  • Bake for 18–20 minutes until golden and puffed.
  • Cool slightly before removing from pan and serving.

Notes

Do not overmix the batter to keep muffins light and fluffy. Flatten sausage patties so they fit neatly in the muffin cups. Reheat gently to keep eggs tender.
