Ingredients
  

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 cup cold unsalted butter, cubed
  • 1 cup cottage cheese
  • 1/4 cup milk or buttermilk
  • 1 large egg
  • 1 tbsp fresh chives, finely chopped
  • 1 tbsp fresh parsley, chopped
  • 1 tbsp fresh thyme leaves
  • 1 tbsp fresh dill, chopped (optional)

Instructions
 

  • Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
  • In a large bowl, whisk together the flour, baking powder, baking soda, salt, black pepper, and garlic powder until evenly combined.
  • Add the cold butter cubes to the flour mixture. Cut in using a pastry cutter or fork until the mixture resembles coarse crumbs.
  • In a separate bowl, whisk together the cottage cheese, milk, and egg until mostly smooth. Stir in the chopped fresh herbs.
  • Pour the wet mixture into the dry ingredients and gently mix just until combined. The dough should be soft and slightly sticky.
  • Turn the dough onto a lightly floured surface. Pat to about 1-inch thickness, then cut into biscuits using a round cutter.
  • Place biscuits on the baking sheet. Brush tops lightly with milk or melted butter and bake for 12–15 minutes until golden.
  • Remove from the oven and let cool for a few minutes before serving warm.

Notes

Best enjoyed warm for maximum softness. Keep butter cold for flaky layers, and handle the dough gently to avoid dense biscuits. Fresh herbs provide the best flavor, and the dough should remain slightly sticky.
