Ingredients
  

For the Bowl:

  • 1 lb lean ground beef (93% lean recommended)
  • 2 medium sweet potatoes, peeled and diced
  • 1 avocado, sliced or diced
  • 1 cup cottage cheese (low-fat or full-fat)
  • 1 yellow onion, diced
  • 2 tbsp olive oil
  • 1 taco seasoning packet (or 2 tbsp homemade mix)
  • 2 tbsp hot honey (store-bought or homemade)
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • ¼ tsp ground cinnamon
  • Salt & black pepper to taste

Optional Garnishes:

  • Chopped cilantro
  • Red pepper flakes
  • Lime wedges
  • Chili crisp oil

Instructions
 

  • Roast the Sweet Potatoes Preheat your oven to 400°F (204°C).Toss diced sweet potatoes with 1 tbsp olive oil, paprika, garlic powder, cinnamon, salt, and pepper.Spread evenly on a baking sheet and roast for 40–45 minutes, flipping halfway through until golden and crisp at the edges.
  • Cook the Ground Beef In a skillet, heat 1 tbsp olive oil over medium heat.Add diced onion and sauté for 5–7 minutes, until soft and translucent.Add ground beef, breaking it apart with a spatula. Cook until browned and no pink remains.Sprinkle in taco seasoning and a splash of water, stirring until the mixture thickens and coats the beef evenly.
  • Assemble the Bowls In each bowl, layer:
    A scoop of roasted sweet potatoes
    A portion of seasoned ground beef
    A few avocado slices
    A generous spoonful of cottage cheese
  • Drizzle and Serve Finish each bowl with a drizzle of hot honey.Add garnishes like cilantro, chili flakes, or a squeeze of lime for extra brightness.
