For the Cookie Dough

  • 1 cup (2 sticks) unsalted butter, softened
  • ¾ cup granulated sugar
  • ¾ cup packed light brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ tsp almond extract (optional but magical)

  • 1 tsp baking powder
  • ½ tsp salt

Optional Coffee Glaze

  • 1 cup powdered sugar
  • 2-3 tbsp milk or strong brewed coffee
  • ¼ tsp vanilla extract

Instructions
 

Prepare the Crumble

  • In a medium bowl, whisk together flour, brown sugar, cinnamon, and nutmeg.
  • Cut in cold butter with a pastry blender or fork until the mixture forms coarse crumbs.
  • Refrigerate the crumble for at least 30 minutes — this helps it stay crisp when baked.

Make the Cookie Dough

  • In a large mixing bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy (3–5 minutes).
  • Beat in eggs one at a time, then add vanilla and almond extract.
  • In a separate bowl, whisk together flour, baking soda, baking powder, and salt.
  • Gradually mix the dry ingredients into the wet ingredients until just combined.
  • Fold in sour cream or Greek yogurt. Don’t overmix!
  • Cover and chill dough for at least 30 minutes (or overnight for deeper flavor).

Assemble and Bake

  • Preheat oven to 375°F (190°C) and line baking sheets with parchment paper.
  • Scoop rounded tablespoons of dough onto the sheet, spacing about 2 inches apart.
  • Gently flatten each dough ball with your fingers.
  • Sprinkle each cookie generously with the chilled crumble topping.
