Ingredients
  

  • 2 cups all-purpose flour
  • 1 cup cottage cheese
  • 2 large eggs
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, finely minced
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tbsp olive oil
  • extra grated Parmesan cheese, for topping

Instructions
 

  • Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  • In a large mixing bowl, whisk together the flour, baking powder, and salt.
  • In a separate bowl, stir together the cottage cheese, eggs, olive oil, minced garlic, and Parmesan cheese until mostly smooth.
  • Gradually add the wet mixture to the dry ingredients, stirring until a soft dough forms.
  • Transfer the dough to a lightly floured surface and knead for 2–3 minutes until smooth and cohesive.
  • Divide the dough into 6 equal pieces and roll each piece into a ball.
  • Press a hole through the center of each ball and gently stretch to form a bagel shape.
  • Place the bagels on the prepared baking sheet and sprinkle generously with extra Parmesan cheese.
  • Bake for 20–25 minutes, or until lightly golden and cooked through.
  • Let the bagels cool for a few minutes before serving warm.

Notes

Use small-curd cottage cheese for the smoothest dough. Avoid over-kneading to keep the bagels tender. Adjust garlic to taste and add herbs like parsley or chives for extra flavor.
