Ingredients
  

  • 3 cups all-purpose flour
  • 2 tsp fine sea salt
  • 1/2 tsp instant yeast
  • 1 1/2 cups lukewarm water (90–100°F)
  • 4 cloves garlic, minced
  • 2 tbsp fresh herbs, finely chopped
  • 1 tbsp olive oil (for coating)

Instructions
 

  • In a large bowl, whisk together flour, salt, and yeast. Stir in minced garlic and chopped herbs.
  • Add lukewarm water and stir until a sticky, shaggy dough forms. Cover the bowl tightly.
  • Let dough rise at room temperature for 12–18 hours until doubled and bubbly.
  • Turn dough onto a floured surface and gently shape into a round loaf. Place on oiled parchment and rest for 45–60 minutes.
  • Preheat oven to 450°F (232°C) with Dutch oven and lid inside for 30 minutes.
  • Transfer dough into hot Dutch oven, score the top, cover, and bake for 30 minutes.
  • Remove lid and bake uncovered for 15–20 minutes until deeply golden.
  • Transfer bread to a wire rack and cool at least 30 minutes before slicing.

Notes

The dough should be wet and sticky—this is intentional for an airy crumb. Fully preheat the Dutch oven to create steam for a bakery-style crust. Allow bread to cool before slicing to prevent a gummy texture.
