Ingredients
  

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 3/4 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 large eggs
  • 1/2 cup unsalted butter, melted and slightly cooled
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • 1/2 cup mini chocolate chips

Instructions
 

  • Measure all ingredients and allow the melted butter to cool slightly before mixing.
  • Preheat the waffle iron and lightly grease it to prevent sticking.
  • In a large bowl, whisk together flour, cocoa powder, granulated sugar, brown sugar, baking powder, and salt.
  • In a separate bowl, whisk eggs, melted butter, milk, and vanilla extract until smooth.
  • Gently fold the wet ingredients into the dry ingredients until just combined. Do not overmix.
  • Fold in the mini chocolate chips evenly throughout the batter.
  • Let the batter rest for 2 minutes to improve texture.
  • Pour batter into the waffle iron and cook for 3–4 minutes until set and slightly crisp on the outside.
  • Remove carefully and serve warm with desired toppings.

Notes

Do not overmix the batter to keep waffles tender and fudgy. Preheat and lightly grease the waffle iron for crisp edges. A pinch of espresso powder enhances chocolate flavor. Best served warm for maximum fudginess. Batter can be refrigerated up to 24 hours before cooking.
