Frito Cowboy Cabbage is a quick and flavorful Tex-Mex dinner made with taco-seasoned ground beef, crisp cabbage, black beans, sweet corn, crunchy Fritos, cheddar cheese, and creamy ranch dressing.

Ingredients
  

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 4 cups chopped green cabbage
  • 1 cup diced tomatoes
  • 1 cup canned black beans, drained and rinsed
  • 1 cup canned sweet corn, drained
  • 2 cups Fritos corn chips
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup ranch dressing or Southwest-style dressing

Instructions
 

  • In a skillet over medium heat, brown the ground beef. Drain excess fat, then stir in taco seasoning with a splash of water and simmer for 2–3 minutes.
  • Chop the cabbage, dice tomatoes, and drain black beans and corn while the beef cooks.
  • In a large bowl or casserole dish, layer cabbage, seasoned beef, beans, corn, and tomatoes. Toss gently to combine.
  • Sprinkle Fritos over the top and evenly scatter shredded cheddar cheese.
  • Drizzle ranch or Southwest-style dressing over the dish just before serving. Toss lightly if desired or serve layered.

Notes

Best served immediately to keep the Fritos crunchy. Store chips separately if making ahead. Easily customizable for vegetarian or spicy preferences. Great for potlucks and busy weeknight meals.
