  • baking sheet
  • parchment paper
  • Mixing bowl
  • electric mixer or whisk
  • wire cooling rack

Ingredients

  • 2 large egg whites, room temperature
  • 1 cup granulated sugar
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt
  • 1 cup semi-sweet chocolate chips

Instructions

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a clean, dry bowl, beat the egg whites until soft peaks form.
  • Gradually add the sugar while continuing to beat until stiff, glossy peaks form.
  • Gently mix in the vanilla extract and salt until just combined.
  • Carefully fold in the chocolate chips to keep the mixture light and airy.
  • Spoon dollops of the mixture onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake for 25–30 minutes, until the cookies are lightly golden with crisp tops.
  • Remove from the oven and allow the cookies to cool on a wire rack.
  • Let the cookies rest for at least 4 hours or overnight to develop the best texture and flavor.

Notes

Always use room-temperature egg whites and a grease-free bowl for best volume. Fold gently to avoid deflating the meringue. Allow the cookies to rest fully to achieve their signature texture.
