Preheat the oven to 350°F (175°C) and lightly grease a muffin tin.
Add the eggs, cottage cheese, milk, salt, and pepper to a blender or food processor and blend until smooth and slightly frothy.
Pour the mixture into a bowl and gently fold in the cheddar cheese, chives, and bell pepper.
Divide the mixture evenly among 8 muffin cups.
Bake for 16–18 minutes until puffed and just set in the center.
Remove from the oven and cool briefly before loosening the edges and serving.
Notes
Use full-fat cottage cheese for the best texture. Avoid overbaking to keep the egg bites soft and moist, and let them cool slightly before removing from the pan.
