For the Cabbage
- 2 medium green cabbages
- 2 tbsp olive oil or butter
- Salt and black pepper, to taste
For the Filling
- 12 oz smoked sausage (andouille or kielbasa), sliced
- ½ lb shrimp, peeled and deveined
- ½ cup onion, finely chopped
- ½ cup bell peppers (red and green), diced
- 2 cloves garlic, minced
- 2 tbsp olive oil or bacon fat
- 1 tsp Cajun seasoning
- ½ tsp paprika
- ½ tsp garlic powder
- ¼ tsp cayenne pepper (optional)
- ½ cup shredded mozzarella or cheddar cheese (optional)

- Fresh parsley, chopped
- Green onions, sliced
1. Prepare the Cabbage
Preheat the oven to 375°F (190°C).
Slice the tops off the cabbages so they sit flat.
Carefully core the centers, leaving about 1 inch of cabbage walls.
Rub the inside of each cabbage with olive oil or butter, then season with salt and pepper.
Place the cabbages upright in a baking dish.
2. Cook the Cajun Filling
Heat olive oil or bacon fat in a large skillet over medium heat.
Add onions, bell peppers, and garlic. Sauté for 5–7 minutes until softened.
Stir in sliced sausage and cook until lightly browned.
Add shrimp, Cajun seasoning, paprika, garlic powder, cayenne (if using), salt, and pepper.
Cook just until shrimp turn pink, about 2–3 minutes. Remove from heat.
3. Stuff the Cabbages
Spoon the shrimp and sausage mixture evenly into each cabbage.
If using cheese, sprinkle some inside before filling completely.
4. Bake
Cover loosely with foil and bake for 40–50 minutes, until cabbage is tender.
Remove foil and bake an additional 10 minutes to lightly brown the top and melt the cheese.
