Ingredients
  

For the Cabbage

  • 2 medium green cabbages
  • 2 tbsp olive oil or butter
  • Salt and black pepper, to taste

For the Filling

  • 12 oz smoked sausage (andouille or kielbasa), sliced
  • ½ lb shrimp, peeled and deveined
  • ½ cup onion, finely chopped
  • ½ cup bell peppers (red and green), diced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil or bacon fat
  • 1 tsp Cajun seasoning
  • ½ tsp paprika
  • ½ tsp garlic powder
  • ¼ tsp cayenne pepper (optional)
  • ½ cup shredded mozzarella or cheddar cheese (optional)

Optional Garnish

  • Fresh parsley, chopped
  • Green onions, sliced

Instructions
 

1. Prepare the Cabbage

  • Preheat the oven to 375°F (190°C).
  • Slice the tops off the cabbages so they sit flat.
  • Carefully core the centers, leaving about 1 inch of cabbage walls.
  • Rub the inside of each cabbage with olive oil or butter, then season with salt and pepper.
  • Place the cabbages upright in a baking dish.

2. Cook the Cajun Filling

  • Heat olive oil or bacon fat in a large skillet over medium heat.
  • Add onions, bell peppers, and garlic. Sauté for 5–7 minutes until softened.
  • Stir in sliced sausage and cook until lightly browned.
  • Add shrimp, Cajun seasoning, paprika, garlic powder, cayenne (if using), salt, and pepper.
  • Cook just until shrimp turn pink, about 2–3 minutes. Remove from heat.

3. Stuff the Cabbages

  • Spoon the shrimp and sausage mixture evenly into each cabbage.
  • If using cheese, sprinkle some inside before filling completely.

4. Bake

  • Cover loosely with foil and bake for 40–50 minutes, until cabbage is tender.
  • Remove foil and bake an additional 10 minutes to lightly brown the top and melt the cheese.

5. Serve

  • Garnish with parsley or green onions.
  • Slice into wedges and serve hot.
