Ingredients
  

  • 2 cups gluten-free all-purpose flour (with xanthan gum)
  • 1 tsp baking powder
  • 1 tsp salt
  • 3/4 cup warm water
  • 2 tbsp olive oil

Instructions
 

  • In a mixing bowl, whisk together the gluten-free flour, baking powder, and salt.
  • Add warm water and olive oil, stirring until a soft dough forms.
  • Lightly knead the dough for 2–3 minutes until smooth and pliable.
  • Divide the dough into four equal portions.
  • Roll each portion into a thin round on a lightly floured surface.
  • Heat a skillet over medium heat.
  • Cook each flatbread for 2–3 minutes per side until golden spots appear.
  • Remove from heat and cover with a clean towel to keep warm.

Notes

Measure flour accurately for consistent results. Add water gradually depending on your flour blend. Use a gluten-free flour that contains xanthan gum for better structure. Cover cooked flatbreads with a towel to keep them soft and pliable.
