Ingredients
  

For the Coffee Mixture

  • 1 ½ cups strong brewed coffee or espresso
  • 2 tbsp granulated sugar
  • ½ tsp vanilla extract

For the Cottage Cheese Base

  • 16 oz low-fat cottage cheese (2%)
  • 4 tbsp sugar
  • 1 tsp vanilla extract

For the Egg Yolk Mixture

  • 2 large egg yolks
  • 2 tbsp sugar

For Assembly

  • 24-30 ladyfinger cookies (depending on size)
  • 2 cups heavy cream (cold)
  • Unsweetened cocoa powder, for dusting

Instructions
 

Step 1: Prepare the Coffee Mixture

  • In a medium bowl, combine brewed coffee, sugar, and vanilla.
  • Stir until sugar dissolves completely.
  • Pour into a shallow dish and let it cool to room temperature.

Step 2: Process the Cottage Cheese

  • Place cottage cheese in a food processor and blend until smooth.
  • Add sugar and vanilla extract; process again until creamy.
  • Chill in the refrigerator while preparing the egg yolk mixture.

Step 3: Set Up a Double Boiler

  • Fill a saucepan with water, ensuring the bowl used for the egg yolks does not touch the water.
  • Bring water to a gentle simmer.

Step 4: Cook the Egg Yolk Mixture

  • In the double boiler, whisk egg yolks and sugar constantly for about 10 minutes.
  • Cook until the mixture is pale, thick, and smooth.
  • Remove from heat and continue whisking for a few minutes to slightly cool.

Step 5: Combine Egg Yolks with Cottage Cheese

  • Add the cooled egg yolk mixture to the chilled cottage cheese in the food processor.
  • Blend until fully combined and creamy.

Step 6: Whip the Cream

  • In a separate bowl, whip the cold heavy cream until stiff peaks form.
  • Gently fold whipped cream into the cottage cheese mixture for a light, airy texture.

Step 7: Assemble the Tiramisu

  • Quickly dip ladyfingers into the cooled coffee mixture.
  • Layer soaked ladyfingers in the bottom of your serving dish.
  • Spread half of the cottage cheese mixture over the ladyfingers.
  • Repeat with another layer of soaked ladyfingers and remaining filling.
  • Smooth the top and dust generously with unsweetened cocoa powder.

Step 8: Chill

  • Refrigerate for at least 2–3 hours to let flavors meld.
  • Serve chilled, optionally garnished with shaved chocolate or fresh berries.
