Ingredients
  

  • 4 cups broccoli florets, finely chopped
  • 4 cups cauliflower florets, finely chopped
  • 1/2 cup red onion, diced
  • 1/2 cup green bell pepper, diced
  • 1/2 cup red bell pepper, diced
  • 1/2 cup carrots, finely sliced and diced
  • 1/2 cup sweet corn (canned or fresh)
  • 10 slices bacon, cooked, drained, and chopped
  • 1 cup Colby Jack cheese, shredded
  • 1/2 cup ranch dressing

Instructions
 

  • In a large mixing bowl, combine chopped broccoli, cauliflower, red onion, green and red bell peppers, carrots, and sweet corn.
  • Add the cooked bacon and shredded Colby Jack cheese to the vegetable mixture.
  • Drizzle ranch dressing over the salad and gently toss until all ingredients are evenly coated.
  • Serve immediately or refrigerate for 15–20 minutes to allow flavors to meld before serving.

Notes

Best served fresh for maximum crunch. Store dressing separately if preparing ahead. Swap ingredients easily to suit your taste preferences. Ideal for meal prep, parties, or weeknight dinners.
