Ingredients
  

  • 1 cup small-curd cottage cheese (4% milk fat recommended)
  • 1/4 tsp onion powder or garlic powder (optional)
  • 1 tbsp everything bagel seasoning (optional)

Instructions
 

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Place the cottage cheese in a fine-mesh strainer, press gently, and blot with paper towels until most of the liquid is removed.
  • Transfer the drained cottage cheese to a bowl and mix in onion powder or garlic powder if using.
  • Spoon tablespoon-sized portions onto the baking sheet, space evenly, and flatten into thin circles.
  • Sprinkle with seasoning if desired and bake for 30–40 minutes, checking after 25 minutes, until edges are golden and centers are dry.
  • Allow the chips to cool completely on the baking sheet before removing to achieve maximum crispness.

Straining the cottage cheese thoroughly is essential for crisp chips. Allow the chips to cool completely after baking, as they continue to crisp while cooling. Season to taste and keep a close eye during the final minutes of baking.
