  • 1 cup fresh raspberries
  • ¼ cup honey or maple syrup
  • 1 tsp pure vanilla extract
  • Fresh raspberries & mint leaves — for garnish

  • Blend the Ingredients: Add the cottage cheese, raspberries, honey (or maple syrup), and vanilla extract to a blender or food processor. Blend until the mixture becomes completely smooth and creamy — about 1 minute.Tip: Scrape down the sides halfway through to ensure even blending.
  • Portion the Mousse: Spoon the mixture evenly into four small glasses or ramekins. You’ll notice it’s slightly thick already — that’s a good sign.
  • Chill: Cover and refrigerate for at least 1 hour. This helps the mousse set and lets the flavors marry beautifully.
  • Garnish & Serve: Just before serving, top each mousse with a few fresh raspberries and a sprig of mint. Serve chilled.
