Ingredients
  

  • 1 cup cottage cheese
  • 2 large eggs
  • 1 cup shredded mozzarella cheese
  • 1 cup almond flour
  • 1 tsp baking powder
  • 2 cloves garlic, finely minced
  • 1 tsp dried oregano or Italian seasoning
  • salt, to taste
  • melted butter or olive oil (optional, for brushing)
  • fresh parsley, chopped (optional)

Instructions
 

  • Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • Add the cottage cheese and eggs to a blender or food processor and blend until completely smooth.
  • Transfer the mixture to a bowl and stir in almond flour, baking powder, mozzarella, garlic, seasoning, and salt until a thick dough forms.
  • Spread the dough onto the prepared baking sheet, shaping it into a rectangle about ½ inch thick.
  • Bake for 15–18 minutes, until the edges are golden and the center is set.
  • Brush with melted butter or olive oil if desired, sprinkle with parsley, slice into breadsticks, and serve warm.

Notes

Blend the cottage cheese thoroughly for the smoothest texture. For deeper color and flavor, brush the top with butter or olive oil before baking or broil briefly at the end.
