Ingredients
  

  • 1/4 cup cottage cheese
  • 1 large egg
  • 2 tbsp almond flour (or oat flour)
  • 1 tbsp maple syrup or honey
  • 1/2 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/4 tsp baking powder
  • pinch of salt
  • 1 tsp maple syrup (gooey center)
  • 1/4 tsp ground cinnamon (gooey center)
  • 1 tbsp Greek yogurt or cream cheese
  • sweetener to taste (for topping)

Instructions
 

  • In a microwave-safe mug, combine cottage cheese, egg, almond flour, maple syrup, vanilla extract, ground cinnamon, baking powder, and salt. Stir until smooth.
  • In a small bowl, mix maple syrup and cinnamon. Add to the center of the batter and gently swirl.
  • Microwave on high for 60–90 seconds until the cake is set and slightly puffed.
  • Mix Greek yogurt or cream cheese with sweetener and spoon over the warm mug cake before serving.

Notes

For best texture, blend cottage cheese if it’s very curdy. Microwave in short intervals to avoid overcooking. This mug cake is best enjoyed warm for a gooey cinnamon center.
