  • ½ cup powdered sugar, plus extra for coating
  • 2 tsp vanilla extract
  • 2 cups all-purpose flour
  • ½ cup cocoa powder
  • ¼ cup finely ground coffee or espresso
  • ½ cup finely chopped nuts (optional, almonds or walnuts recommended)

Instructions
 

  • Preheat Oven: Set your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Cream Butter & Sugar: In a large bowl, beat softened butter with ½ cup powdered sugar until fluffy.
  • Add Vanilla: Stir in vanilla extract until well incorporated.
  • Combine Dry Ingredients: In a separate bowl, mix flour, cocoa powder, coffee, and optional nuts.
  • Mix Together: Gradually fold dry ingredients into the butter mixture. Avoid overmixing to keep cookies soft.
  • Shape Cookies: Scoop dough by tablespoons and roll into balls. Place 2 inches apart on the baking sheet.
  • Bake: 12–15 minutes until edges are firm but centers remain soft. Let cookies cool briefly on the sheet.
  • Coat with Sugar: Roll warm cookies in powdered sugar until fully covered for that snowy effect.
  • Cool Completely: Transfer cookies to a wire rack to cool before serving.
