Ingredients
  

  • 3 large thick-skinned oranges (navel oranges recommended)
  • 4 cups granulated sugar
  • 3 cups water
  • 10 oz dark chocolate (60–75% cacao), chopped
  • flaky sea salt (optional, for garnish)

Instructions
 

  • Wash and scrub the oranges thoroughly, then dry well. Slice into even 1/4-inch rounds and discard the ends.
  • Place orange slices in a pot, cover with cold water, bring to a boil, and simmer for 2 minutes. Drain completely.
  • In the same pot, combine sugar and water. Heat gently, stirring until the sugar dissolves and the syrup is clear.
  • Arrange orange slices in a single layer in the syrup. Simmer uncovered on very low heat for 90–120 minutes, turning gently every 30 minutes, until translucent.
  • Remove slices and place on a wire rack set over a baking sheet. Air-dry for 24–48 hours until tacky but not wet.
  • Melt the dark chocolate using a double boiler or microwave in short intervals, stirring until smooth.
  • Dip each dried orange slice halfway into the melted chocolate, allowing excess to drip off.
  • Place dipped slices on parchment paper, sprinkle with flaky sea salt if desired, and let set at room temperature until firm.

Notes

Dry the candied orange slices completely before dipping to ensure the chocolate sets properly. Use high-quality chocolate bars for the smoothest coating and best flavor.
