Equipment

  • saucepan
  • wire rack
  • Mixing bowl
  • parchment paper
  • double boiler

Ingredients

  • 2 large organic oranges
  • 1 cup water
  • 1 cup granulated sugar
  • 3 oz dark chocolate (70% cocoa)
  • sea salt (optional)

Instructions

  • Wash the oranges thoroughly. Trim the tops and bottoms, score the peel vertically, remove, and cut into thin strips.
  • Place the peels in a pot with water, bring to a boil for 5 minutes, then drain. Repeat once more with fresh water.
  • Combine sugar and water in a saucepan. Add peels and simmer gently for 45–60 minutes until translucent.
  • Remove peels and place on a wire rack to cool completely and allow excess syrup to drip off.
  • Melt the dark chocolate using a double boiler until smooth.
  • Dip each peel into chocolate, let excess drip off, and place on parchment paper.
  • Refrigerate for at least 1 hour until chocolate is fully set. Sprinkle lightly with sea salt if desired.

Notes

Organic oranges are recommended since the peel is used. Boiling the peels twice helps reduce bitterness. Allow the chocolate to fully set before storing to keep a clean, glossy finish.
