- 1½ lbs boneless, skinless chicken breasts, cut into 1-inch cubes
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 2-3 red chilies, finely chopped (adjust spice to taste)
- ¼ cup soy sauce
- 2 tbsp honey
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- ½ tsp red pepper flakes (optional)
- Salt and black pepper to taste

- 1 cup chili garlic sauce (store-bought or homemade)
- 2 cups shredded mozzarella
- ½ cup provolone (optional, for extra richness)
- ¼ cup chopped fresh cilantro
- ¼ cup thinly sliced green onions
