Ingredients
  

  • 2 boneless, skinless chicken breasts
  • salt
  • black pepper
  • 1 tbsp olive oil
  • 1 ripe avocado, sliced
  • 4 slices cheese (Swiss, cheddar, or provolone)
  • 4 slices bread (sourdough, ciabatta, or sandwich bread)
  • 2 tbsp mayonnaise
  • 1 tbsp Dijon mustard
  • 1 small red onion, thinly sliced
  • 1 tomato, sliced
  • butter or olive oil, for grilling

Instructions
 

  • Season the chicken breasts with salt and pepper. Heat olive oil in a skillet over medium-high heat and cook for 6–7 minutes per side until golden and fully cooked. Let rest briefly, then slice thinly.
  • In a small bowl, mix mayonnaise and Dijon mustard until smooth.
  • Spread the sauce evenly on one side of each bread slice. Layer sliced chicken, avocado, cheese, red onion, and tomato on two slices. Top with remaining bread, spread-side down.
  • Heat a pan over medium heat with butter or olive oil. Grill sandwiches for 3–4 minutes per side until golden brown and the cheese is melted.
  • Let rest for one minute, slice in half, and serve warm.

Notes

Let the chicken rest before slicing to keep it juicy. Lightly mash the avocado to prevent slipping. Grill over medium heat for even melting and press gently with a spatula for an extra crispy finish. You can swap chicken for turkey or grilled tofu, use whole-grain or gluten-free bread, or add spinach, arugula, or roasted peppers for variation.
