Ingredients
  

  • 1/2 cups cooked rice (preferably day-old)
  • 1 chicken breast, diced
  • 2 eggs, beaten
  • 1/2 cups diced carrots
  • 1/3 cups green peas
  • 2 cloves garlic, minced
  • 2 green onions, sliced (for garnish)
  • 2-3 tbsp soy sauce
  • 1 tbsp oil (plus more if needed)

Bang Bang Sauce:

  • 1/4 cup mayonnaise
  • 2 tbsp sweet chili sauce
  • 1 tbsp Sriracha (adjust to taste)
  • 1 tbsp rice vinegar

Instructions
 

  • Prepare the Bang Bang Sauce
    Whisk together mayonnaise, sweet chili sauce, Sriracha, and rice vinegar in a small bowl. Set aside.
  • Cook the Chicken
    Heat 1 tablespoon oil in a large skillet or wok over medium-high heat. Add diced chicken, season with salt and pepper, and sauté for 5–6 minutes until browned and cooked through. Remove and set aside.
  • Scramble the Eggs
    In the same pan, pour in the beaten eggs and scramble until just set. Remove and keep with the chicken.
  • Sauté the Vegetables
    Add a drizzle of oil if needed, then sauté carrots and garlic for 2–3 minutes until slightly softened. Stir in green peas and cook for another minute.
  • Stir-Fry the Rice
    Add cold rice to the pan over high heat. Break apart clumps and stir-fry for 3–4 minutes until the rice is slightly crispy and coated in oil and vegetable flavors.
  • Combine Chicken, Eggs, and Rice
    Return chicken and eggs to the skillet. Mix evenly and drizzle soy sauce over the mixture. Stir to combine.
  • Add the Bang Bang Sauce
    Pour the prepared sauce over the rice mixture. Stir until everything is evenly coated and heated through.
  • Garnish and Serve
    Sprinkle sliced green onions on top and serve hot.
