Ingredients
  

  • 4 cod fillets
  • 2 tbsp olive oil
  • salt, to taste
  • black pepper, to taste
  • 1 lemon, zested and juiced
  • 2 tbsp fresh dill, finely chopped
  • 1 tbsp Dijon mustard
  • 2 garlic cloves, minced
  • 1 tbsp honey

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • Line a baking sheet with parchment paper and arrange the cod fillets evenly.
  • Drizzle cod fillets with olive oil and season with salt and black pepper.
  • In a small bowl, whisk together lemon zest, lemon juice, dill, Dijon mustard, garlic, and honey.
  • Spoon the lemon dill sauce evenly over each cod fillet.
  • Bake for 12–15 minutes, until the fish is opaque and flakes easily with a fork.
  • Garnish with extra fresh dill and serve immediately.

Notes

Pat the cod dry before seasoning for best texture and avoid overbaking to keep the fish moist. Fresh dill provides the brightest flavor, but dried can be used if needed.
