2large apples, peeled, cored, and diced (Granny Smith or Honeycrisp work best)
2large eggs
½cup(120ml) milk
¼ cup (60g) unsalted butter, melted
1tspvanilla extract
Glaze
1cup(120g) powdered sugar
2tbspmilk
½tspvanilla extract
Instructions
Preheat & PreparePreheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat for easy cleanup.
Mix Dry IngredientsIn a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg. This ensures the spices and leaveners are evenly distributed.
Combine Wet IngredientsIn a separate bowl, whisk the eggs, milk, melted butter, and vanilla extract until smooth and creamy.
Make the BatterPour the wet ingredients into the dry mixture and stir gently until just combined. The batter should be thick but scoopable—don’t overmix! Fold in the diced apples until evenly coated.
Shape & BakeDrop heaping spoonfuls of batter onto the prepared sheet, leaving space between each mound. Bake for 15–18 minutes, or until puffed and golden brown. The edges should be lightly crisp while the centers stay soft.
Prepare the GlazeWhile the fritters bake, whisk together the powdered sugar, milk, and vanilla until smooth. It should drizzle slowly off the spoon—add a touch more milk if too thick.
Glaze & ServeLet fritters cool for 5 minutes, then drizzle with glaze. The heat will help it set into a glossy, sweet finish. Serve warm for that just-baked magic.
